INGREDIENTS (for 48 dumplings):
- 3 and 1/3 cups of flour
- 1 cup of water
- 5 tablespoons vegetable oil
- 1 small onion finely chopped
- 110 g of fresh and chopped shiitake mushrooms
- 6 shiitake mushrooms, chopped
- 500 g of chicken
- 2 teaspoons sesame oil
- 3 tablespoons soy sauce
- 1 teaspoon of sugar
- 2 tablespoons dry sherry
STEP BY STEP:
Put the flour in a large bowl. Add the water little by little until it forms a dough. This process should take about 10 minutes. Then, cover the dough with a damp cloth and let it sit for an hour.
In a large pan, pour two tablespoons of oil and heat them over medium heat. Add the onion and cook it until it is translucent. Then add the natural mushrooms.
Cook for 8-10 minutes and pass the mixture to a bowl, along with chicken, sesame oil, soy sauce, sugar, sherry, and 3 tablespoons of oil.
Use a pair of chopsticks to stir the mixture in the same direction for 5 minutes, until a homogeneous mass forms.
Divide the dough into 48 pieces, and crush it using a roller. Then, add 2 tablespoons of stuffing in each piece.
When they are all ready, take a nonstick skillet, add a tablespoon of oil and heat over medium heat. Add the dumplings and fry them until lightly browned. Then pour water to cover them, leaving 1 centimeter of the pan free.
