- 2 boneless chicken breasts
- Salt kosher and freshly ground black pepper
- 1 spoon of unsalted butter
- 2 teaspoons sesame or vegetable oil
- 2 teaspoons grated fresh ginger
- 3 teaspoons freshly chopped garlic
- 3 teaspoons low sodium soy sauce
- 2 tablespoons mirin
- 4 cups of homemade chicken broth
- 1/2 cup mushrooms shitake
- 1-2 teaspoons sea salt
- 2 large eggs
- 1/2 cup sliced scallions
- 2 packages of ramen noodles
STEP BY STEP:
Preheat the oven to 375 degrees. Season the chicken generously with salt and pepper.
Melt the butter in a large pan suitable for the oven over medium heat. Add the chicken, skin side down, and cook until golden brown and easily peeled off the pan, about 5 to 7 minutes.
Turn the chicken and cook it another 4-5 minutes, until it is golden. Put the pan in the oven and let it cook for 15-20 minutes, until the chicken is cooked.
Remove from the oven, place the chicken on a plate and cover with aluminum foil until ready to serve.
Heat the oil in a large pot over medium heat Add the garlic and ginger, and stir them for a few minutes, until they soften.
Add the soy sauce and the mirin, and mix them well for a minute. Add the broth, cover the pot, and let it boil.
Remove the lid and simmer for 5 minutes, then add the mushrooms. Simmer for another 10 minutes, and season with salt to taste.
Fill a pot with enough water to cover the eggs. When it starts to boil, add the eggs and let them simmer for 7 or 8 minutes.
Meanwhile, fill a large bowl with water and ice. When the eggs are cooked, pass them to the bowl with ice. Wait at least 5 minutes, or until they are cold enough to catch them. Carefully remove the peel and cut it in half, lengthwise. Reservation.
Cut the chives and chicken into thin pieces. Reservation. When the eggs are finished cooking, add the ramen noodles to the boiling water and let them cook for 2-3 minutes, until they are soft. Next, separate the noodles into two large bowls.
Add chicken and ramen broth. Top with fresh chives and egg. You are ready to serve!
