Zucchini spaghetti with marinated salmon

INGREDIENTS (4 people):- 2 zucchini
- 4 or 5 cloves of garlic
- Virgin olive oil
- Salt
- Black sesame.
For marinated salmon:

- 1.5 kg of fresh salmon cut into two fillets
- 750 g of fat salt
- 750 g of sugar - Dill

Clean the salmon of the most fatty parts and remove the spines. Sprinkle with dill; Reserve. Mix the salt and sugar in a bowl. Put part of the mixture in a bowl and, on top, the loins of salmon on your skin. Cover with the rest of the marinade. Cover the fountain with plastic wrap. Store in the fridge 36 hours. After that time, remove the fish and pass it through tap water to remove any marinade. Dry well with paper towels.

Cut the zucchini With a mandolin. Steam them for 5 minutes. Put a pan on the fire with 2 tablespoons of oil. Add the garlic cut into thin slices. Once golden brown, add the zucchini and saute 3 minutes; season.

Remove salmon skin and cut it into dice. Add it to zucchini spaghetti and sprinkle with black sesame. Serve hot.
