Squid noodles

Difficulty: Easy. Weather: 40 min

INGREDIENTS (4 people):- 600 g squid
- 150 g cherry tomatoes
- 1/2 onion
- 1 Chinese onion
- 3 dl beef broth
- 1 tablespoon soy sauce
- 1 teaspoon yellow pepper
- Olive oil
- Coriander
- Salt

STEP 1

Squid noodles: Step 1.

Wash and cut the tomatoes in half. Put a saucepan on the fire with the tomatoes. Add olive oil until completely covered. Confit the tomatoes over low heat for 15 minutes. Remove, drain and reserve.

STEP 2

Squid noodles: Step 2.

Cut the squid into strips very thin (ask the fish shop to clean the squid and remove the skin). Prepare a casserole with plenty of water and, when it boils, scald the squid strips two minutes. Remove, drain and reserve.

STEP 3

Squid noodles: Step 3.

Put a pan over low heat with 4 tablespoons of oil. Add the onion and leave 5 minutes. Add the broth, soy and chili. Keep 10 minutes; remove. Serve the squid over the sauce and add the tomatoes, the scallions and the cilantro.
